Will I shag my engine if I zoom at high revs?

I despatched for a year on a VF750F. Stoating bike. It finally took the crank out at 93k but that was poor maintainace by the subsequent owner. Regular oil and filter changes, and the oilway banjo bolt changed to the 12mm head one with the bigger hole.
No worries.

I owned a VF1000FF for three years, It took the cams out at 12k which were replaced under honda goodwill (out of warrenty) the only problem after that was a fried regulator and naff rear shock.

If it's running and still has some power left you mean. I test rode an old Sabre that would barely give my GS400E a run for it's money, or at least it felt like it.

I've got an option for a 1982 VF750S, first owner, only 20,699 km. Cams were replaced by Honda back in '85, hasn't been driven in the last 7 years. 

 Haven't seen it yet. Supposed to be in top condition. Will need new tires, battery, seals for everything I suppose. 

 Would it be worth considering? Price is 1,300 CDN.

Best bet is probably to get onto the owner's clubs - at the very least HOC.org.uk, and possibly http://www.vf1000.com/forum/.

They'll be able to tell you what to look for other than the usual problems caused by a bike sitting idle for so long:

gummed up carbs - likely to need removing and cleaning, possibly ultrasonically

rotting petrol tank

goosed battery

cracked, mishapen, wooden tyres

acidic engine oil, fork oil & brake fluid

leaking fork seals

stuck / seized pistons, valved, cam chain tensioners

seized / stiff final drive chain

corroded chassis bearings

various engine seals  gone hard / oval, may fail when used again

I'm not saying it'll have all of these, just stuff that can happen if a vehicle isn't used for a long time, particularly if it wasn't stored very carefully.
