I've got a pair of Alpinestar boots sitting in a wardrobe unused till I get a bike, which isn't going to be until I'm on full pay again, likely to be at least 6-8 months. Do I need to do anything to stop the leather drying out or will they be ok in the plastic bag they are in?

They'll probably be OK, but I always give them a good clean and condition with Saddle Soap nicked from the wife's horse collection.

The leather does come back to life again after a once over with this stuff.

Yeah they'll be fine. I have a few pairs of boots I use once a year, like MX boots etc. I use Chelsea Leather food once a year on my boots, jackets, leathers etc. Works a treat.

+1 on the saddle soap and wax products

I have used it on a leather sofa and my second hand bike jacket and it did the trick in both instances
